Notes and Tips:
Make sure the grill is really hot before you put the salmon on. This helps to get those lovely grill marks and keeps the fish from sticking. For extra flavour, you can add some fresh herbs or a splash of white wine to the oil mixture.

Ingredients
1 lemon
2 x 170g pieces skin-on Atlantic salmon
1 tbsp vegetable oil
1 tsp sea salt 1/2 tsp freshly cracked black pepper
Mixed Salad or other sides

Method
Step 1:  Preheat your grill to high heat, around 450-500°F (230-260°C).

Step 2:
In a small bowl, mix the vegetable oil, sea salt, and black pepper.

Step 3:
Brush the lemon halves and salmon pieces all over with the seasoned oil.

Step 4:
Place the salmon skin and the lemon cut on the grill. Cook for 6 minutes.

Step 5:
Flip the salmon and lemons. Grill for 4 minutes, or until the salmon’s internal temperature reaches about 135°F (57°C).

Step 6:
Remove from the grill and let the salmon rest for a few minutes. It will continue to cook and reach the perfect internal temperature of 145°F (63°C).
