Ingredients:
1 carrot
3 celery stalks
¼ cabbage
2 onions
500g beef mince
3 tablespoons rice
1 teaspoon curry powder (levelled)
45g chicken noodle instant soup
1 tablespoon oil
1 pinch salt and pepper, to taste
Method:
Step 1: Cook the mince. Heat a splash of oil in a pan over medium heat. Add the beef mince, celery, and onions. Cook it all up, stirring, until the mince is nicely browned and the veggies have softened.
Step 2: Make the soup. While the mince is cooking, make up your chicken noodle soup in a large saucepan, following the instructions.
Step 3: Blend the ingredients. Once the soup is ready and the mince is browned, add the mince mix, rice, curry powder, salt, and pepper. Give it a good stir to combine all those lovely flavours.
